Lechón a la Leña
Whole pork, roasted slow over hardwood. Crackling skin, tender meat, a squeeze of lime. The dish we want people to drive across Florida for.

Dominican wood-fired kitchen · Coming to Florida
Whole-roasted pork, wood-fired chicken, and a place to gather. Authentic Dominican flavor, coming to Florida.
The Fire
Everything here starts outside, in the courtyard, where the wood burns down to embers. No shortcuts and no rush. Just patience, heat, and someone who knows when to turn the spit.

Cooked outdoors, in the open air, apart from the dining room.
Split logs are stacked by the hearth and burned down until the flames settle.
Steady, glowing heat does the real work, low and even.
The pork and chicken are watched, turned, and basted with care.
Carved and served while the skin still crackles.
The Food

Seasoned the way it's done back home and cooked over live embers until it's smoky, juicy, and ready to share.

Our menu is still taking shape. Items marked proposed are ideas, not confirmed dishes. Prices will be shared closer to opening.

The Table
Our tables are dining-size versions of the wooden tables Dominicans gather around to play dominoes. Big enough for the whole platter, built to last, and made for long conversations.

01
Solid stained wood, a substantial frame, and sturdy legs with proper knee room. Softened corners make it comfortable for four, with larger versions for groups.
02
The A Leña emblem sits beneath a smooth, sealed clear finish that is easy to clean between meals.
03
Room for full dinner plates, a shared platter in the middle, and drinks in the corner cup holders.
04
Discreet domino rails along the edge nod to the game without getting in the way of dinner.
Step Inside
Dominican Soul
In the Dominican Republic, food is never just food. It's the Sunday plate everyone waits for, the pot that always has room for one more, the neighbor who stops by and stays for dinner.
And then there's the domino table. Four chairs, loud laughs, someone slapping down the last tile. Around that table, strangers become friends and friends become family.
A Leña brings both to Florida: the slow fire, the honest flavor, and a table where you're welcome to sit as long as you like.
